John Dory has delicate white flesh with firm, flaky texture. A stunning fish which has 3 natural fillets per fillet. It has a slightly sweet flavour. We believe the best way to cook Dory is by roasting the whole fish. Score the skin, splash with oil and oven roast for the best result.
This fish will come oven ready, with the spines along the top trimmed, but the head left on. (we can remove the head upon request).
